Corn starch is obtained from wet grains of "zea mays" submitted to a grinding process aimed at separating the heavy elements (starch) from the light ones (gluten). Corn starch is gluten-free and therefore suitable for celiacs, replacing wheat flour. It is also commonly used as a thickener and to make cakes soft.
